I knew a guy who was a manager at The Quilted Giraffe in NYC. They had sterling silver salt and pepper shakers for every table and occasionally the set would go missing. The servers always knew immediately because removing them between the entrée and dessert courses was a mandatory step of service. Nothing was ever said to embarrass the diners, a charge was simply added to their bill.

He told me this happened like clockwork a few times a week and no diner ever complained. They simply paid up to save face and he broke a new salt and pepper shaker set out of storage to replace the one they just sold.
